CA: Sweet Vanilla Challah (in reverse)

We had a lot of eggs on hand so i decided to make bread again. went relatively well, the only thing i think i learned was that the egg yolk / sugar / vanilla glaze really needs to be spread on as much of the surface as possible, and that it kind of had a slightly burnt taste (probably from the sugar). maybe next time would take out the sugar. the crust was a bit thick- maybe i'd lower the temp too.
 
however, the taste was really good and these things were just beautiful to work with. i would also maybe try a more creative braid or loaf, but i wanted to keep it simple this time!

CA: Italian Raisin - Walnut - Almond Wheat Bread

From the "Bread Bible" 

Was a good amount of work, but good eats afterwards.  Wheat is definitely a bit finicky- drier.  but more wholesome after.  didn't have enough walnuts so i put in some almonds- worked well.  little keys i didn't realize beforehand- soak the raisins in hot water, then dry them before folding them in. that way the are nice and juicy in the loaf.  Also when "folding" in the nuts and almonds, make the layers very thin- mine was too thick in one part and it caused part of the slices to fall apart.  also wheat breads really need to cool in order for the loaf to set- especially with items folded in. 

best part of the whole process was letting the yeast preferment with some honey- mmmmm smelled like a brewery!

CA: Making Orange "Julius"

the secret is...
 
1. freezing ice cubes of fresh squeezed OJ.
2. putting in a little bit of powdered sugar (makes it frothy).
3. a touch of vanilla.
