This week I made a baguette of sorts. I used this recipe for Pain L'Anciene, or old style bread. it was pretty good, took a lot of time though, well it wasn't too bad. but basically you make the dough the night before, then shape it, then let it rise.. then this time i tried double steaming the oven with a steam pan (which was kind of scary, i thought i was going to break the pans or create strange fumes) and also spray.
The payoff of course came with the eating. Discovered two ways I really like these- cut on the bias, then served with olive oil and either goat cheese or cut grapes (grapes at costco are REALLY GOOD right now btw). Better yet, grapes, olive oil AND goat cheese... alas, i ate all the goat cheese before i had the grapes idea.
Anyways, some of these pics i didn't process much- sorry, got a little lazy with this one!

Made some mushroom risotto last night for my wife who was able to come for dinner (she works a lot of nights). This was pretty fun- i used the America's Test Kitchen recipe. You make broth out of chicken stock, an herb bundle, and dried mushrooms (i only had shitake, which aren't good to eat but make a good broth), and a little soy. then cook onions, mushrooms, and garlic- then you make the risotto using the broth and wine. then fold in the mushrooms and cheese!
Made this for a potluck for my small group. Pretty fun, easy... i think i burnt the peas and didn't use the right yogurt, the recipe called for greek style which is super thick, i used some homemade my mom made, which was super watery... maybe will try again.
this morning i made a version of this with linguica, paprika and tomatoes and cilantro. ill post those pictures later!
pretty funny- but also depressing to think these guys came when bush came in and what happened in those 8 years.

This memorial day weekend, i made ciabatta for the first time. It was supposed to be for this meal with my parents, but they changed the time so i had to buy BUNS instead. ugh. anyways, this was a lot of fun- more work than other breads and the dough is SUPER wet, but its nice and light and fluffy- and the results were great! you can just eat this with a little oil (i used some truffle oil) - or- my favorite is a bit of goat cheese... which my wife hates. yum, more for me!
used the Cook's Illustrated version which was interesting- uses milk - not for flavor but to help manipulate the texture and size of air holes. this one uses a biga, which is a starter too, to get some nice sour flavor. good good stuff. highly recommend making this.
